75g clear honey

140g liquid glucose

400g caster sugar

4tbsp water

25g bicarb


You will need a tin lined with parchment paper, make sure it’s quite high as this mix rises when the bicarb is added.

Mix the honey glucose sugar and water together.

On a medium heat bring to 150*c on a sugar thermometer

Work fats and whisk in the bicarb being careful not to over mix.

Pour into a lined tin and leave until it’s completely cool.
